Owner and distiller Brian Rabon spent two full days with mentor Clay Smith to find the exact combination of botanicals for the base of this gin. They started with 100 botanicals and narrowed it down to 13 after hours of smelling, tasting, and trying every combination they had time for.
The final result features Florida-centric botanicals like citrus and rosemary that controls the flavor profile, paired with bergamot, which tantalizes the initial aroma.
We then add this carefully crafted gin to barrels to be aged for months. The final product is a complex and flavorful spirit, meant to be enjoyed neat or in a unique twist on a classic gin and tonic.
